Russ and Conor first met at the University of Rhode Island, where they both earned degrees in Aquaculture and Fisheries. After years of exploring different paths, they decided to combine their love for the ocean, the environment, and entrepreneurship. In 2017, they launched Swell Oyster Company—the first, and still the only, oyster farm in Hampton Harbor, New Hampshire. Today, they’re dedicated to sustainably cultivating premium oysters while enriching the local ecosystem and bringing a fresh, authentic coastal experience to their community.

Swell Oyster Company was founded by Russ and Conor—two aquaculture graduates who turned their passion for the ocean into Hampton Harbor’s first and only oyster farm. Since 2017, they’ve been sustainably cultivating premium, hand-raised oysters that deliver unmatched freshness and flavor. Today, Swell brings that experience directly to your event. With our on-site oyster catering, guests enjoy the story, the shucking, and the harbor-to-table taste that makes every gathering unforgettable.

    We hired Swell Oyster Co. to do our wedding raw bar and they were amazing! Everything was so fresh, beautifully displayed, and a huge hit with our guests. A raw bar is such a great touch to cocktail hour! The team was professional, friendly, and made the entire experience seamless from booking to the day of service. We’re so happy we chose them, cannot recommend enough!

    Swell had such a great set up on our wedding day for cocktail hour. Our guests loved it and there's truly nothing better for a New England wedding than fresh oysters! Highly recommend them. Their shop is also a must for holidays if you are local and looking for a good gift!

    Swell provided an incredible raw bar experience for my couple! Communication was a breeze and they show up with everything needed to set up. No extra rentals required. They have a live shucker to interact with guests and provide lots of great info on the oysters and other items they are serving. Guests loved getting to learn more about oysters and the process of growing them. Swell offers their own NH grown oysters but can source other regional oysters, the biggest shrimp you've ever seen and delicious ceviche! Absolutely a top notch addition to any event.
